Easy weeknight dinner for the family? Fajitas.

Are you always being asked 'What's for dinner?'

This is a great recipe for the whole family as it can be adapted to needs and tastes. Check it out!

What you will need:

🛒 Ingredients for 4 people. Approx 500kcal / 25g protein per serving

2 chicken Breasts
1 red onion, chopped
1 red pepper, sliced
1 red chilli, finely sliced (optional)

For the marinade:

1tsp smoked paprika
1tbsp ground coriander
1tsp ground cumin
2 garlic cloves
4tbsp olive oil (swap for water to reduce calories by 80-100 kcal per serving)
Juice of 1 lime
Tabasco (optional)

⏰ Time saving hack - use a packet mix

To serve
8 tortillas
Bag of mixed salad
1 tub salsa

Instructions:


🙌🏼 How to cook:

1️⃣ Mix everything for the marinade together in a bowl and season with salt & pepper.

2️⃣ Mix the chicken breasts, onion, red pepper and chilli, if using, into the marinade.

3️⃣ Heat a non stick pan until hot and add the marinated chicken to the pan.

4️⃣ Cook until the chicken is cooked through (no longer pink in the middle).

5️⃣ Put the tortillas in the microwave to heat up for 30 seconds.

6️⃣ Serve with the chicken mix, salad and a tub of salsa.

To INCREASE the calories for those who need more:

Add:

🧀 Cheese
🥑 Guacamole
🥛 Sour cream
🍚 Rice

To DECREASE the calories for those who need less:

🌯 Switch to 1 wrap and have one ‘naked’ (in a bowl)
❌ Do not add additional toppings/fillings

Or make a swap:

🧀 choose to add cheese/guacamole but reduce to 1 wrap.
