The world’s easiest Risotto (no stirring required)
I’ve always steered clear of Risotto’s due to the labour intensive cooking and stirring but that all changed when I saw on Pinch of Nom that you could make them in the oven, this really is the The world’s easiest Risotto (no stirring required)!
This video is my take on their recipe which you can find in there orange book
I used cooked chicken breast, mixed veggies and lime which was delicious.

You’ll need for 2 people:
300g Risotto Rice
1 red onion, chopped
Fry light spray
2 cooked chicken breasts or 100g smoked salmon
500ml Chicken stock
150g frozen chopped veg or peas
Salt & Pepper
Garlic paste (optional)
1 lemon or lime
Pre heat the oven to 180C
Find a large pan with a lid that can go in the oven
Add some fry light to the pan, add the chopped onion
Fry for 3-4 mins, add garlic paste if you’re using it
Next add the dry risotto rice and toast for a few minutes before adding the stock
Bring to the boil then put the lid on, move the pan to the oven for 20 mins
After 20 mins, remove the pan, take off the lid carefully and add the veggies, chicken and lime/lemon juice Put the lid back on (remember to use something to protect from the heat) and return to the oven for 5 minutes
Remove and serve! Add pepper and salt if you wish.
